Clean-eating is the current craze! But for me, wellness has always been a lifestyle I enjoy because, quite simply, when I’m well and balanced, I feel so alive! And as we all know by now, the food we eat has a direct impact on our level of health. In fact, some would argue (myself included!) that food is the single most important medicine we can take to create and maintain good health. Thing is, so many folks equate health food with bland food. That doesn’t have to be the case! When I wrote Sexy, Healthy Food, a primary goal was to create recipes that are both flavorful and healthy. To really embrace the recipes in my cookbook, one has to understand what it means to ‘eat clean’. A clean-eating lifestyle is one that minimizes or eliminates toxins, artificial and processed foods. A person who ‘eats clean’ tries to eat foods in their natural state (or very close to it) as much as possible. A clean-eating lifestyle can be vegan (only veggies, fruits, nuts, seeds, legumes and some grains), vegetarian (veggies, fruits, nuts, seeds, legumes, some grains, occasional dairy, fish or poultry) or paleo (veggies, fruits, only nuts and seeds that are anti-inflammatory, no grains, clean meats and fish). It’s all about choosing what works best for you! In Sexy, Healthy Food, I’ve given readers 25 of my family’s best-loved and most requested recipes. Everything from the most delicious yogurt parfait to hearty soups, tasty smoothies and out-of-this-world salads, meals and even a few desserts! Delicious Moroccan Soup
Serves 6-8 A truly flavorful soup, this is sure to become a favorite, quickly. Not only is this soup hearty, healthy and delicious, it’s convenient to make. Simply add all ingredients to a crockpot, turn it on High setting, and voila! – delicious Moroccan Soup, six hours later! Ingredients: 3 ribs celery, washed and chopped 3 large carrots, washed, peeled, chopped 1 large sweet potato (or two small), peeled and chopped 1 large onion, peeled and chopped 1 small-to medium red pepper, diced 2 cups kale, washed, de-ribbed and chopped 1 15-oz can black beans 1 15-oz can garbanzo beans 6 cups water 1/4 cup coconut oil 3 tsp curry 1 1/2 tsp sea salt 1 TB garlic powder 1 TB unsweetened shredded coconut Instructions:- Add all chopped vegetables (except the kale) and water to the crockpot.
- Add seasonings and coconut oil. Stir to mix.
- Cover and cook on HIGH for 6 hours.
- Stir occasionally. At the 5 1/2 hour mark, stir in the kale. Cover and continue cooking in crockpot on HIGH for 30 minutes.
- At the 6 hour mark, remove the crock to a heat-proof surface. Uncover and stir in coconut. Taste; add more curry or sea salt if needed.
